Buckeye Beauties

These are not traditional buckeyes.  However, I feel that its okay to change things up.  I made a small batch of these for a friend.  She is having her first child and its a girl.  She really loves buckeyes, so a little treat was what the baker ordered.  I made the inside like a traditional buckeye with peanut butter, etc...  I dipped them in white candy melts and sprinkled pink powder edible decoration.  So pretty!

You will need:
   1 package of candy melts
    (pick your color)
   1/2 cup melted butter
   1 lb. confectioners' sugar
   1 lb. peanut butter
   2 cups graham cracker crumbs
   1 tsp. vanilla extract 
   Sprinkles
I change up the sugar and butter to my liking.  Less sugar and more butter.  
Put peanut butter in microwave safe bowl.  Make it slightly melted.  It's easier to mix. Combine melted butter, peanut butter, sugar, vanilla extract and graham cracker crumbs. Shape mixture into walnut size balls.  Place on waxed paper and place in the fridge for an hour.  
Melt your candy or chocolate in a bowl and dip your peanut butter balls in the chocolate and place on waxed paper. Sprinkle right away.  They will set up quickly.
