Sweet Buckeye's





I realize these are not the best presentation.  However, these are so wonderful it just doesn't matter.  Simple, delicious, and inexpensive.  I made these for a party the other day. They went so fast I couldn't believe it.  

You will need:
1 (16oz.) package chocolate chips
1/2 cup melted butter
1 lb. confectioners' sugar
1 lb.  peanut butter
2 cups graham cracker crumbs
1 tsp. vanilla extract

Combine butter, confectioners' sugar, peanut butter, graham crackers, and vanilla extract in a bowl, mixing well.  One trick I did was to melt part of the peanut butter a bit to make it easier to mix the ingredients together. Shape mixture into walnut size balls.  Place on a pan lined with wax paper.  Put into fridge for about 1 hour.  Melt chocolate chips in the microwave for about 1 minute at a time.  Should not take more than 2 minutes.  Mix well so that it is smooth.  Dip peanut butter balls into the chocolate.  I used a fork to carefully move them and take them out. Keep in fridge until you are ready to serve. If you leave them out they do get soft, but even so are wonderful.  Enjoy!
