Limoncello Gelee



Recently it was my mother's birthday.  She has a passion for lemon.  So I thought I would surprise her with this adult treat.  Not the cheapest dessert I have ever made, but was a big hit.  The challenge, all of the kids were begging for some too.  Next time I will have to make a kid friendly version.  

1 table spoon plus 1/4 teaspoon unflavored gelatin
3 tablespoons cold water
3/4 cup Prosecco (Italian sparkling wine)
3/4 cup limoncello
1/2 cup sparkling water
1/4 cup sugar
1 tablespoon fresh lemon juice
slices of lemon to garnish
*Serves 4

1)  Sprinkle gelatin over cold water in a small bowl.  Let stand until softened, about 5 min.

2)  Heat Prosecco, limoncello, sparkling water, and sugar in a medium saucepan over medium heat, whisking  occasionally, until sugar dissolves. Add lemon juice and softened gelatin, and whisk until gelatin  dissolves.  
3)  Pour mixture into desired containers.  Refrigerate until set, at least 45 min.  This can be put into one pan    and be cut, plated, and served. Garnish with slice of lemon.
