It was a delightful day last Friday at my daughters school.  The kids could not have asked for anything more.  Lovely weather, Valentine exchange, Roller Derby, and a Bake Sale.  A very successful Bake Sale, I might add.  We earned more than we needed, which is great because the children always need something.  I am so pleased with the turn out of baked goods and parent involvement.  Thank you to the teachers as well.  It is hard work on a regular day, but I think even more so when you do a special day like this one.  

Orange Dream Cookie 
     1 cup butter, softened
     1/2 cup sugar
     1/2 cup packed brown sugar
     1 egg
     1 teaspoon orange extract
     2 1/4 cups all-purpose flour
     3/4 teaspoon baking soda
     1/2 teaspoon salt
     1 1/2 cups vanilla or white chips

Mix butter, and sugars until light and fluffy.
In another bowl beat  egg and orange extract.
Combine flour, baking soda, and salt to your egg/extract mixture.
Gradually add flour mixture to butter mixture.
Stir in vanilla chips.

On a cookie sheet place a tablespoon full of your mixture, keeping the cookies 2 in. apart.  Bake at 350 degrees for 10-12 minutes or until golden brown.  

This parent that made the cookies added a nice touch to them by wrapping them in groups of 3 cookies and tying the bag with pretty orange ribbon...
